Water Activity Measuring
Checking the water activity is an essential factor in quality assurance and product development in the food, pharmaceutical and cosmetics industries. If too much water is available in a product, there is a risk of microbial growth and water migration. Clumping, consistency change and reduced shelf life are the result. Food or drug manufacturers, for example, are obliged to prove to the FDA that the aw value of a product is so low that bacteria can no longer grow.
